The Oyster Bar is perhaps the best 24-hour restaurant in Las Vegas. The counter-only seating is filled most of the time while cooks efficiently churn out gumbo, crawfish étouffée, and other Cajun specialties including the famed pan roast. Choose your seafood and give them the spice level you can handle. Soon comes the bowl of spicy, creamy seafood stew made with tomatoes, brandy, and Cajun spices. The spice may burn and you'll be glad for the rice. It will be a must stop on your Vegas trips and make you wish you had brought a cooler.
