Sushi Hiroyoshi
Las Vegas was hit with a tsunami of authentic Japanese eats. Kabuto, Izakaya Go, Yui Edomae Sushi and Monta set a new bar for noodles, fish and omakase dining. But one of the newest entries arrived with a splash – despite being in a non-descript strip mall. Hiroyoshi is in such an obscure place you might question the sanity of Hiro Yoshi — formerly a sushi chef at Blue Ribbon — for taking the space. But doubts evaporate with your first bite. This is authentic, Tokyo-style sushi. Fine fish, finely cut and served on rice so pure, you can count the grains in your mouth. Hiro-san includes some specialty rolls on his menu, but you can get a “Dragon Maki Mega Roll” anywhere. Here, you come to see Hiro’s knife work, and to eat impeccable fresh fish and impeccably seasoned rice that stands up to anything Yui or Kabuto can throw at you.
