Shrimp Tacos Dorados
Jalisco native Raul Ortega serves some excellent ceviches, aguachiles, and seafood cocktails, but the dish that’s earned him national acclaim is the taco dorado. He fills a deep-fried corn tortilla with shrimp, vegetables and tomato and tops the crispy results with creamy avocado, a mild tomato-based salsa roja and raw white onion.
