One of the first true farm-to-table restaurants that opened in San Diego before the trend, this restaurant makes nearly everything from scratch and in-house, from the cured meats down to the sauce accompaniments. The seasonal menu, which changes daily, has refreshing offerings like crispy pig ears, roasted bone marrow, and fried sweetbreads. Dishes are meant for sharing, with the menu deliberately failing to separate appetizers from entrees.
