Baked Pacific oysters

Hard to go wrong at one of my favourite upscale restaurants in the city. The Baked Pacific oysters with whipped garlic butter and grated truffle are worth the visit alone. These are a must, along with the fried sweetbreads on toast! Think escargots on steroids, but with oysters. The oysters are cut up in chunks resembling escargot and soaked with a piping hot garlic butter sauce and fragrant truffle. It's a very rich appetizer, but the aerated butter makes it lighter.
