Máximo, located in the heart of fashionable Colonia Roma, is one of the city's culinary gems. Chef Eduardo “Lalo” García and his wife, sommelier Gabriela López, sharing a passion for great food, opened the original Maximo Bistrot Local to showcase ingredients from in and around Mexico City. The creative menu, deeply rooted in the French bistro style, changes every day according to what’s available in the market. The recently inaugurated industrial-style space is cavernous yet comfortable. Reservations are necessary well in advance.
